Switch quote USDT to USDC

Now that exchanges apparently delist USDT pairs, our open USDT deals could possibly benefit from a possibility to switch them to USDC pairs if those exist.

Let me push that again given the EEA USDT regulations. It would even help if we could switch to whatever other quote currency.

This is pretty good feature.
Allows users to run usdt pairs until delist without any worry
